Chop the pepper and onion at home before you leave for your camping trip.
Heat pie irons for 1 to 2 minutes in fire.
Coat both sides of the pie iron with non-stick cooking spray.
Add potatoes, pepper and onion and corned beef.
Top with the egg and salt and pepper.
Close pie iron and cook with the potato side toward the coals for about 2 minutes. Then flip and cook for about 1 minute. Open pie iron and check cooking progress. Continue cooking and flipping until done.
